Notes

Generate 6 gallons of water at 155 degrees. Add the water additions at this time.

Pull off 2 quarts into a 2nd kettle to steep the specialty grains. Maintain around 150-155 degrees for 30 minutes.

Rinse the grains using water from the 1st kettle and then add this water back into the main boil kettle.

Raise temperature to around 200 degrees, cut the heat and add the DME stirring to avoid clumps. Raise temperature to full boil and then begin the hop schedule. Remember to add Whirlfloc and Yeast Nutrients with 10 minutes remaining in the boil.

Perform a whirlpool of sorts using the pump for 15 minutes after the boil, adding another 1 ounce of hops at this time.

Cool the wort, aerate, and add yeast.
