Notes
This is not actually primed with DME. It uses a priming wort made on bottling day:
Priming Wort
• 0.25 lb Crisp Chevalier Heritage Malt
• 0.10 lb Crisp Brown Malt
• Mash grains in 1.5 qt treated water at 145 °F for 30-45 min.
• Add 0.2 oz (weight) treacle.
• Boil 10 min.
• Cool completely before use.
Or if you have the freezer space, you can freeze 1.25-1.5 quarts of boiled wort and that that out.
This is based on old porter making practices. The mashing is meant to be underlet.
