Notes
Treat mash water with 10gms Calcium Chloride, 5gms Calcium Sulphate ( Gypsum ), 4gms Magnesium Sulphate ( Epsom ) and 15gms Baking Soda ( Sodium Bicarbonate ).
Heat kettle to 75C and then transfer to mash tun.
0815. Mash in to try to get mash start temp 68C. After mash in temp 64.5C add 6L boiling water - still no change. Wait for HLT to reach 68C and start recirc at 0855 until HLT gets to 70C and mash to 68C.
Initially mash temp down to 63.5C. 65C at0900. Reach 67.5C on PID at and 67.7C on mash thermo at 0910. Switch off recirculating and let sit. Sitting on 67.1c at 0950.
PH of 5.7 not too bad a little high but did not calibrate meter.
Finish mash temp at 1025 66.2C start transfer to kettle at 1025 and collect 77L - forgot to empty water from kettle maybe 10L???
Raise element efficiency from 91 to 95 as slow to get past 97.5C. Light Boiling at 1115 ( 98.3C ). Rolling boil at 1118 (100C).
Vigorous boil at 1122 (101.2). Drop E.E. to 90.
Add 33gms Pacific jade into spider at 1130. Add 70gms EKG and 40gms Fuggles at 1200 into spider. Add 3gms koppafloc and 15gms yeast nutrient at 1210. 70L after boil/ 7L boiled off.
Switch off boil at 1230.
Add whirlpool hops ( 140g Cascade? ) at 85C at 1240. Start C/Flow cooling at 1314 after drop to 70C. Drop to 49C at 1330 - reading 27C on C/Flow thermometer.
Turn off C/Flow and let rest at 38C at 1345.
Runoff to WW25 at 1520. Collect 21L. OG 1050.
Runoff to 50L Kegmenter at 1450 Collect 41L
Pitch 700ml Nottingham ex 2501 into WW at 1645 at 22C.
Pitch 700ml Nottingham ex 2502 into 50L at 1630 at 23C.
Go well Rip Snorter Mk2.
