I added a small amount of lactic acid at two separate intervals during the mash. The pH was still in the 5.5 range at mash temp. I'm not sure why, but I didn't want to keep adding it in case my pH meter was off.

Notes

First batch brewed with Steam Condenser. Power level was about 42% during the boil, which produced a nice roll--not too aggressive, but effective. I estimated about 0.75G boiloff before setting out to brew, based on others experiences. This seems accurate based on my pre and post boil gravities, though the volume does look to be more than 5.25 gallons in the fermenter. I will mark the fermenter and measure out how much liquid went in there once it is empty.
