** NOTE about Dingeman cara 45 ****
****************

This recipe was brewed using Dingeman cara 8 instead of the cara 45 shown in the recipe. brewersfriend shows "fermentable not found" when trying to save with cara 8 so can't save the recipe with the correct grainbill.

Brewed on 8/8

  • add sugar T-0 mins
  • hop stand 10 mins
  • dry hop 1oz chinook 1 oz centennial 1 week before transfer

Pre-boil was 7.25 Gallons. My Foundry only boiled off 0.75 gallon at 60 mins and OG was 1.065. Added another 1/2 cup of sucrose and extended the boil another 15 mins. Ended up with 6.25 gallons at flame out. OG was 1.069 at pitch. Sucks, but way she goes. I checked Refractometer with distilled water afterwards because it was so far off but did lock in at 0. Tasted wort after flameout. Super sweet, but impressive flavor. Pitched one packet of US-05 on top of 5.5 gallons of wort

    8/13 PM
Bubbling stopped around 6pm of day five. Switched over to airlock and pulled a sample. Sweetness is gone, flavor "not too bad!", not as dark as expected but way too early to call it done. Brix clocks in at 8 (from 15.9) with WCF of 1.04 puts it (currently) at 6.2% ABV.

    8/16 PM
    Still at 8 brix

    8/17 AM
    Kegged

    8/22 PM
Moved to kegerator on 10PSI around 34F

    8/31 PM
Dry hop in keg with 1oz Chinook and 1oz Centennial

    9/5
Poured a glass. Not a lot of malty body but good.
