Maintaining 68-69F throughout the day sitting on basement floor with ice packs around it. Ferment started a couple hours after pitching. Very vigorous by Sunday. |

Sunday night/Monday morning ~2am: airlock full of krausen. Removed, cleaned up ensuing beer-splosion, and placed a blow off tube. Temp was down to 65-66F. Placed in beer box. |

Temps holding around 66-67F. Still has large krausen but no blow off since the beer-splosion night. |

Took sample with small tubing through stopper. Delicious. Huge dark, baked fig/raisin character. Big roast flavor. Thick but not too cloying. Slight warming alcohol on the finish. |

Re-yeasted each bottle with EC-1118. ~1/3 of a 1/8 tsp (1/24 tsp ;)) into each bottle. Every bottle had slight hiss upon opening. Used 3.6 grams of 5 gram sachet over 30 bottles. Put back in insulated box at ~75F-79F. |
