Notes

Mill the grains, add the mash hops, and mash in at 154F for 30 minutes. Sparge with 168F water to approximately 8 gallons. Boil for 75 minutes, adding hops according to schedule. After the boil, whirlpool for 20 minutes, adding the whirlpool hops. Chill to about 65F, aerate well, and pitch the yeast. Ferment at 65-70F until the beer reaches terminal gravity, then cool to 55F. After 3 days, drop the yeast, then add dry hops for 3 days. Chill to 33F for maturation for about 7 days, then package and carbonate. Total tank time approximately 3 weeks.
