Extract Substitution:

of water at 165° F (74° C) for 30 minutes, then remove and rinse grains with hot water.
Stir in dextrose and top up kettle to 8 gallons (30 L), and bring to a boil. Add hops as

An Imperial Black Belgian Ale aged in old Invergordon Scotch whisky barrels with mountains of raspberries, tayberries and blackberries in each cask. Decadent but light and dry, this beer would make a fantastic base for ageing on pretty much any dark fruit - we used raspberries, tayberries and blackberries beause they were local. Don't worry too much about controlling the temperature with the Belgian yeast strain - just make sure it doesn't rise above 30°C!

Notes: Drop pH with 1 Tb spoon of LA88. Sour with L. plantarum for 3 days at 90+F
Finish with Saison yeast and optionally Brett (most likely Mad Ferm and DuPont on first try)
Ferment two weeks, add .#5 Hibiscus, zest and flesh of 2 Grapefruits.
Re-ferment for two weeks, adding 4 oz Citra after 1st week.
