Notes: Brewing Process
1. Mash @152 degrees for 60 min - No mash out this batch.
2. Pull grain basket from the kettle - let set for 10 min.
3. Raise temp to 207 degrees to boil for 60 min.
4. Hop/Fining Additions
1) @60 min - 1 oz. Motueka
2) @15 min - 1 oz. Motueka
3) @15 min - 2 tablets of Whirlfloc
4) @5 min - 1 oz. Motueka
5) @Flame out - 1 oz. Motueka
Whirlpool - circulate the wort for 15 min. while temp. drops naturally
*We used 2 hop baskets which might make the beer more 'limey' because of Motueka hop profile. If too 'limey,' use less hops.
OG 4/9/21: 1.053
Fermentation at 57 degrees
Gravity Check 4/13/21: 1.030
Gravity Check 4/14/21: 1.022
Gravity Check 4/16/21: 1.018
Diacetyl Rest from 4/17/21- 4/21/21

Cold Crashed from for 24 hours at 32 degrees and rest at 37 degrees
3/19: 6 gallon transferred into fruiting fermenter. Mango used 3 lbs. frozen mango and 1 1/2 tbsp. of Mango flavoring.
3/25: Cold Crash JTL
3/19: 4.5 gallons in keg

5 mandarins @160 degrees in .5gal to primary ferm
12AUG2020 - First brew ABV came out to 5% (i think we undercut our water amounts, additional wate added to the Primary caused a big miss on the OG), the corriander notes are pretty strong. Might drop to .5oz crushed corriander and possibly drop the early 60 min Amarillo addition to lower IBUs. Very light and drinkable. Great cirtus aroma and flavor, but the corriander takes over IMO. Will makes changes and update after brew#2. Possible Citra ddry hop? Or the Bavaria Mandarina? |
