Notes: Mash to 1.06
Sparge and boil for 5 minutes to sanitize
Cool down to 120 add ginger/lemon juice and steep down to 75
Move to fermenter with additional ginger and lemon zest
Add yeast
Ferment for 2-3 days to 1.055 then chill to fridge temps with gelatin.
Move to keg and add Potasium Sorbate and Campden Tablet
After 3-5 days move to carbonating keg and carb. Bottle off keg

Notes: Notes from Original recipe. Mostly following Brewing Classic Styles and wanted an easy start.
Duvel Clone
Infusion Mash at 145 degrees for 90 minutes can be subbed for step mash.
Acidulated malt can be subbed for lactic acid or any other acid to get the mash down to 5.4 PH.
Use a 3-4L starter for 10 gallons
Pitch starter @ 64F and allow temp to rise to 80F over 1 week
About 2-3 days after pitching, when the primary is just past high krausen and falling, boil 1/2 gallon of water and disolve cane sugar in it, cover and let cool to room temp and add sugar to achieve 93% attenuation
After fermentation, cold crash for 24-48 hours, rack to keg with gelatin for crystal clear beer and allow to cold condition for 10 weeks
Force carb @ 30 psi for 48 hours for high carbonation. |

Notes: Anvil Foundry brewing system. Almost full capacity with this amount of grains.
All grains and pumpkin go in the mash.
Getting the wort to drain from the grains and sparge is a bitch.
Scooped out grains and put in screen and pressed. Added a little sparge water and pressed again.
Forget about a clear wort draining through the grains. Ain't gonna happen even with 1 lb of rice hulls.
Libby's canned pumpkin. Coated with honey. Baked for 45 mins at 350. Let it cool to 154 and add to mash with 20 minutes left in mash.
For the vanilla bean vodka solution, Veil Vanilla Flavored Vodka.
