GENERAL STARTING POINT FOR ALL GRAIN:

  1. Determine grain bill % of each malt and target FG.
  2. Based on sparging method assume an efficiency.
  3. Reference Pg 194 of How to Brew for calculating avg ppg of the batch.
  4. Determine grain bill from above calculations.
    RECIPE SPECIFIC:
  5. 80% 2 Row 13% 10L Crystal 7% Corn sugar target FG 1.012.
  6. 75%
  7. 2 row: 29ppg x .8
    10L :26ppg x .13
    sugar:42ppg x .07
    = 29.5ppg avg for batch
  8. With desired ABV of 6.9% OG needs to be 1.065 for 5.5 gal post boil. So 65 x 5.5 gal = 358 pts. 358/29.5=12 lbs total grain bill. Remember 1.065 is post boil. Expect 1-1.5gal to boil off so use 7 gal for pre boil volume. Therefore pre boil OG should be 358/7=1.051.

    Determine water/grist ratio. Determine target temperatures and mash method. Fly sparge requires 1.5x mash water.
    Rough Target Mash pH 5.1-5.6
    Add pineapple to fermentor.
    To dry hop be sure to use a nylon bag filter or cheesecloth.
