Whoops! I usually ignore that part since everyone brews a little differently - but we did a lowish (mid/high 140s) mash for over 90 minutes, then mash-out at 165 (optional).

I don’t see it on here and I don’t believe it was mentioned in your YouTube video... How much enzyme (amylase?) did you add?
