If you live in Colorado and have access to Palisade Peaches this recipe is for you! The most fought after beer I've ever brewed. What's not show above is the box of "seconds" that we bought to add to secondary fermentation. To prep those we bought them brew day after the work was done. So brewed Saturday am and bought the peaches in the afternoon. Sunday morning we blanched the peaches, skinned them, and cut them into .5' to 1" chucks. they weren't even and there was lots of juice. We bagged the cube/juice/mush and threw it in the fridge. On the 3rd day of primary we dumped the bag of peaches in. Fermentation kicked up a notch. I let everything sit in the fermentor for 5 more days then pulled the beer off of the yeast and peaches into a keg. Holy cow this was amazing!
