Notes

Add 1 lb lactose at 10 min left in boil.

Create tincture of 2 vanilla beans (scraped and cut) and 8 oz cacao nibs in 10 oz vodka. Steep (shaking daily) for 10 days. Add to beer after fermentation completion. Steep for 3 days.

Cold crash to 37 degrees for 48 hours.

Closed transfer to CO2 filled clean keg.

Set CO2 in kegerator to 30 psi for 2 days, then drop to 10 psi.
