DON'T measure ph right away. Give it 15 minutes to even out. Obviously a bigger difference for darker beers.

If acid is really needed, add a portion of it (50 - 75%) at first. Test at 15 minutes, let cool for 5, then add lactic acid if required.

80% of the sacchrification happened in the first 20 minutes.
