Notes

My 2nd batch and already experimenting. English IPA with a twist or 2.
Mash Boil was done on the stove and steeped @ 60 "
Boil was done out side on a coal fire @ 90" it was a hell rolling boil. about 10minutes of the boil was not boiling had to place the lid on to get it going. Hops herein at that time.
Used Rain water. Didn't do a PH no tester.
Had 1.5 lts left over.
recipe called for safety-04 only had safety-05..
was meant to use challenger 8.5g and gold 7g hops well i only had CTZ 9g, cascade 8g + I added another 7.5 @ 10" , don't ask me why cause I could.
the beer might have a smokey taste not sure. It was pissing down.
had to put the pot in the freezer to bring the temp down, rain was 78
got to 66 by the time i transferred and pitched it was 68.2.
I will not transfer to a 2nd fermenter just going to leave it in the one for 21 -30 days. then bottle for 21or 14?
