Notes
Make yease starter using some of the DME. Boil LME with Loral hops + 1 Tblspoon crushed coriander (use rolling pin) in 4 gallons of water - will boil down. Add I Moss + servomyeces tablet for last 10' of boil
During the last 10 -15 minutes of the boil heat 1/2 gallon or so of chlorinated water (spring water etc) to 100 deg F. Add honey to that water and mix/ dissolve honey into warm water. This prevents the honey from being exposed to higher temperatures to boil off aromatics. My honey is from my backyard hives and some had started to crystalize. Do not worry that the honey has not been sterilized (I have done this approach several times)
I used a refractometer and got an original S.G. of 1.105 . Did not take an final O.G. as I am saving this after brew day before bottling day
Cool wort to 100 deg w/ wort chiller. Add honey and water and top off to 5 gallons. Use wort chiller to cool to desired initial fermentation temperature
Place 1 Tblspoon of crushed coriander + fresh ground nutmeg into sterilyzed primary. Add cooled wort w/ mixed in honey. Add yeast starter. Ferment and rack after initial fermentation. As fermentation slows add dry hops 3 days or so before bottling (no need to go longer) keg or bottle w/ added corn sugar or malt as you prefer.
