Original recipe called for S-23, but my LBS did not have it, so he recommended I change to the Diamond.
He also recommended a do a diacetyl rest since this ferments at 52 degrees. LBS also suggested that I do 1/3 of hops at 60 minutes & remainder at 15 minutes vs 50/50. Felt like that would balance out the IBUs more. I am too new at this to debate that with him!
