Hermit's Rest is the beginning of the Hermit trail in the Grand Canyon. I've hiked that trail a number of times with my dad mostly, and more recently with Kate and my sister, Hannah. There is something about the wildness of the Grand Canyon wilderness that is beautiful and frightening at the same time. Whenever I've gone there, it feels like a bit of a cosmic encounter with some larger thing.

I see beginning to brew sour beers as a journey into the wilderness. It's a whole new world of what brewing beer can be like and be about. It takes more patience and is more complex, but the rewards can be stunning. Thus, Hermit's Rest, for me, signifies the beginning of a journey into the wilderness.

Concept
===
This is following the advice in American Sour Beers and just brewing a simple sour to start out with, to have a real example to observe and taste while reading the rest of the book.

I'm basing the recipe, perhaps appropriately, on the witbier recipe that I brewed unsuccessfully a couple of times. At least once it definitely got contaminated and went bad. After that I got paranoid and ultimately threw up my hands and stopped brewing for a couple years.
