The choice of grain in recipe as shown above is not correct, its my best estimate as I malt my own barley from family farm at Southern Cross in Western Australia, the farm property name is Nollamara, an indigenous name, its a Noongar (local mob) word for the flowering plant Macropidia, commonly known as the black kangaroo paw.
