Modding the hops schedule. Hoping for a "Spicy Fruit Sipper".

Challenger at 45 mins - 28 gm (Fruity/Spicy)
Crystal at 20 mins - 28 gm (woodsy, green, floral and fruity with herb and spice notes of cinnamon, nutmeg and black pepper.)
Crystal at 10 mins - 14 gm (woodsy, green, floral and fruity with herb and spice notes of cinnamon, nutmeg and black pepper.)
Galaxy at 0 mins - 8 gm (passion fruity character along with aromas and flavors of clean citrus and peach) - Use this up.

The Galaxy is a weird one...it is supposedly BEST used at flameout. It is supposed to have a massive aroma impact when used late...but it has the highest bittering.

My choice of T-58 was simply - I have some, it is a little expired, but it has been in solution for 16 hours and it's going at a ferocious clip right now, with a gorgeous white merangy krausen and a TON of activity. Of what I read, this yeast likes 67 to 72 degree fermentation, so I set mine for 68. Also, the higher you ferment, the more clove and fusels you get...mid to late sixties, I read you can expect fruity results...no matter what, it will be spicy - this is supposed to be a "belgian like" yeast (but I wasnt really going for belgian style - just spicy).

I use an Inkbird Sous Vide probe to hold mash temps and circulate full volume for mashing. This gives me a very accurate mash temp. My Grain crush is pretty fine since I do brew in a bag.

Final tasting: It's a Pale Ale...needs a lot more hoppage.
