Notes

Depending on final mouth feel of the beer I may try this with a Hochkurz mash:
Beta amylase rest: 144°F (62°C) for 30 to 45 minutes
Alpha amylase rest: 160°F (71°C) for 30 to 45 minutes
Mash out: 170°F (77°C) for 10 to 15 minutes

Might try 30 min 85C pasteurization instead of boil and add hop in decoction instead of final boil.

Very present stone fruit qualities in this beer as a result of the berliner brett. It's low alcohol and restrained acidity make it really easy drinking and arguably more refreshing than a crisp lager in the heat of summer! The wort was so clear by the hop boil was done and almost completely clear during the secondary fermentation.
