Notes

Bring 18 lt of water to 73ºC. Add the grains.
Mash at 67ºC for 1 hour.
Mash-out at 78ºC for 10 minutes.
Boil with bitter hops for 1 hour.
Add organic lemon zests for the last 15min of boil.
Add another batch of Citra at whirlpool and keep until cold.
Start the fermentation. Add the dry-hopping Citra when the wort is transferred in the second fermenter.
