Brewed 06/29/20.
Mash in w/12.5 L, 1 g CaCl2.
10' at 130 F.
Raise to 148 F, pull decoction.
Decoction rest 15' at 155 F, boil 20' return to main mash, rest at 153 F until 1 hour.
Mash out at 165 F.
Sparge water adjusted w/ 1.5 ml lactic acid, 3 g CaCl2.
Boil, cool to 50 F, pitch sediment from 2.5 L starter.
Primary fermentation at 50 F.
After two weeks, keg and raise to 65 F for 2 day diacetyl rest, then keg and drop temp 3 F per day to 37 F for 10 days, then down to 32 F.
