Judging notes from TRASH 34 (Score of 28): Aroma and flavor dominated by coffee roast (likely from use of chocolate and brown malt). Will focus on increasing caramel malt to balance out these flavors. The chocolate malt also likely caused some acidity which may be reduced by using pale chocolate rather than regular chocolate malt. Also noted little to no hop aroma/character. Can look to increase earthy hops slightly to increase presence.
Will work to increase caramel notes to balance the malt profile and eliminate the roastiness/coffee present in this brew. The use of the brown and chocolate malt together appear to have caused both a high level of roast and also some tannin, which detract from the brew. |
