Notes

Fermented upstairs, 3/8, avg temp 66F. Actual OG 1.044. Excellent crown, good steady fermentation. Racked to secondary in basement on 3/15, SG appeared to be 1.012. Very cloudy. Going to allow clarification and then drop in the lagering rod and put it in the blanket. Am not using the modified carboy for this activity with the blow-off hole; concerns about contamination based on recent problems.

Change of plans: No lagering. Still some action day two of secondary. Keeping in basement, app 55F.

Bottled 3/23. Secondary was showing signs of mold floating on top so did not rest as long as I'd have liked. Tasted great at bottling.
