Notes

This is based on Midwest Supplies Bavarian Hefeweizen Extract Kit, with some alterations. Would prefer to build it all grain, but didn't bring the stuff with me when I PCSed.

I want to build a deeper profile, and as such, am adding 1lb of Gambrinus Honey Malt as the steeping grain, and .5oz of sorachi ace hops at 50 min. Added 1lb of local wildflower honey.

Adding 1oz fresh lemon zest and 2 oz fresh sliced ginger to boil at 50 min.

Hoping to have an end result that's similar to Honeyweiss meets Shock Top, but with a honey ginger bite instead of the overdone orange/coriander.

Hi, this recipe looks interesting and great for spring/summer. Just clarification on the sliced ginger. It has it at 10 days but in your description it mentioned you added to boil at 50min so do you keep it in primary after pitching yeast for 10 days?
