11/24: Started yeast starter with 7.2oz light DME and 2000ML water
11/25: Brew Day
Brought 3.75 gallons water to 162 degrees. Added 1tsp calcium carbonate to lower PH. Added 1 tsp calcium chloride.
Added malts and settled at 148 degrees for 10 minutes. Added 8 cups of boiling water and settled at 151 degrees. Let stand for additional 50 minutes.
Added last grains after 60 minutes, and added 4 gallons of boiling water to settle at 165 degrees. Let stand for 15 minutes.
Took 44 minutes to drain into boil kettle.
90 minute boil according to schedule.
Brix 17.0 SG:1.070
12/7: Transfer to keg SG .012 ABV: 6.6%
