Notes
The first runs from the lauter tun are typically in the 1.085 to 1.090 range and sparging continues until last runs are in the 1.006 to 1.008 range. Sparge water is maintained at 170°F and the volume is
normally about 70% of the kettle fill. The composite pre‐boil gravity is 1.050.
Add midnight wheat malt to re-circulation stage. Latest batch it was added to mash and a charred barrel/smokiness character was perceived. Not over-powering but personally not desirable in the beer.
