8 gallons total water needed - filter and treat with Campden. Expect 1 gallon loss in the mash for 7 gallons to the Kettle. 90 minute boil should put you at 5 gallons post boil. With a high percentage of Pilsner malt the 90 minute boil is necessary to drive off DMS (cooked corn flavor/aroma caused by Pilsner malt).
