Notes
Mash schedule:
- 20 minutes at 144 F (beta amylase rest)
- Pull thick 1/3 of mash, raise through alpha amylase range (150-158 F) and (optionally) hold for ~15 minutes.
- Boiled decocted portion for 30-40 minutes, stirring constantly
- Return to main mash until it hits 156 F. Rest for 30 minutes. Add roasted grains after decoction.
- Raise to 168 F for mash-out. Rest for 15 minutes.
Modified Narziss fermentation schedule:
1) Pitch yeast at ~48-50 F
2) Leave at that temperature for 48-72 hours. Then raise to 54-55 F.
3) One beer has reached 50% attenuation, begin increasing temperature to 59-60 F to finish and let yeast remove diacetyl, sulfur, etc.
4) After reaching terminal gravity, decrease temperature by 2-3 F / day to lagering temperatures.
