(2) American Oak Spiral Medium Toast - Soak in Woodford Reserve + Buffalo Trace enough to cover for 1-week prior. Age in fermenter for ~2 weeks or until preferred taste.
Ramp Yeast Starter up 1-week prior, massive 2L of starter recommended.
Start with WLP001 for first 3-days of fermentation, add starter of WLP099 at day 3 or 4 of fermentation. Oxygenate well, once per day for 4 days for 30 seconds 1200-micron stone.
