Notes

Made over new years week 2025, the only batch we did that week. Made for Valentine's Day, and to age the other half in a neutral oak barrel for a later date.

OG 1.054
Lacto down to 3.23, took 48 hours
Fermented with Ardennes 550 down to 1.011

Half of this went into a barrel

The other half got potassium sorbate, biofine, tetrahop, and 3 volumes of co2 and this fruit:
11400 ml Apple concentrate
6650 ml Tart cherry
1140 ml Cranberry
