Notes
- 냉각 이후 pH 측정하여 4~5사이로 맞춘다.
- 드라이호핑은 냉장고에서 3일간 진행한다.
- 드라이호핑 종료 후 젤라틴을 투여해서 2일간 냉장고에서 응고시킨다.
- 1주일간 탄산화를 하며 탄산 볼륨은 2.5vol로 한다.
