Plan is to bochet 5 pounds of honey (TBD) to a deep chestnut color and then add water to 2 gallons. Fement the bochet on Premier Cuvee yeast for 20 +/- days, then transfer to secondary onto rye-whiskey-soaked French oak cubes and let that oak-age for 60 +/- days. Once complete, brew this batch of Biere de Garde and blend into a bochet once fermentation of the beer is complete. Once the Biere de Garde and Bochet are blended, the plan is to tertiary ferment for 20 days and dry hop with Barbe Rouge hops for the final 3 days of tertiary fermentation and clearing. Warm bottle condition for 30 days, then cellar condition for 6 months.
