Notes

Started 3.5gal DI H2O. with 1.25g CaSO4, 2.5g CaCl2, 0.75g MgSO4, 0.75g NaCl. Grist is 0.5lb flaked oats, 5oz carapils, 5lb Rahr Pale ale malt (2L).

1lb4oz strawberries. started frozen. cooked these down at medium heat in a splash of water and 2 tbsp sugar until thick, foamy, and most of the water evaporated.

peeled 1oz lemon peel

Brought water up to temp and added salts. Mashed in with the entire grist including the flaked oats @151F, temp dropped to 147F, kept mash around 147-151 for 1h.

@ start of boil, added 6g Magnum Hops 12%AA

@ 20min left in boil, added 3g each of Amarillo (9.3%), citra(12.8%AA), galaxy (16.9%AA) hops. all hops from artisan hops except Amarillo hops which are BSG

Cardamom: I took one green cardamom pod, lightly toasted it in a pan on the stove, then crushed the pod. I added 2 total of the crushed black seeds from the middle of the pod to the batch. Lots of people have said that cardamom is very overpowering so I'm trying to be conservative and not ruin this beer lol.


Immediately after the boil is finished, I added another 3g of each hop, as well as my cooked down strawberries, cardamom seeds, and my lemon peel. Shortly after adding I wasn't really happy with the amount of strawberry aroma, so I added 2 more handfuls of frozen berries. I stirred immediately after the addition of these ingredients, and did not stir again after, I let the wort sit off the heat for 15min, then began chilling the wort.

I am using the "little DIPA" yeast strain from omega yeast. This is an older pack from the brew store (MFD 07-2024) (this is 03-2025). This is a 150mL pack, I will pitch 75mL. Hopefully this is viable! Saving the other 75mL in a sanitized Tupperware in the fridge for later use. This strain is designed to express some anti-diacetyl enzyme (called ALDC - not sure how this works), which may help with hop creep later? We will see!

I'M CHANGING THE PLAN! Just going to bottle this without dry hopping. DOing a fruited light beer I guess!
Bottling with 2.5oz (71g) table sugar.
