Notes

BEER NAME「FUKUORI LAGER」

ヨーロッパの研修で様々な地域のLAGER BEERを飲んできた。
→シンプルなビールだけに、その土地の水の特徴も感じられた。

ここ福生里の柔らかな水を使い、その水と使用するモルト配合を生かした独自の糖化工程で仕込む。


変則デコクション案
(前提として)
・糖化はしっかり行えるようにする
・デキストリンモルトはベータマッシュで投入(Pレストは別でしておく)

案1:Pレスト→62℃:20min→72℃:60min(ここでデキストリンモルト)→MO→移送→スパージ→85~90℃:10min→移送

案2:Pレスト→攪拌なし昇温(周りだけデコク)→62℃狙って攪拌し→72℃へ→制御できずに67℃あたりまで来たら、そこで60min糖化→攪拌なし昇温→MO→移送
