A Gruit ale redacted from multiple sources. Relies heavily on Assize of Grain records for starting grain weight.
Wundergrain approximates the uneven toasting of malt achieved by manually fire roasting floor malted barley. PPG and DP are a "best guess" based on bag of grain appearance and previous use.
Selected London ESB yeast as a likely candidate for area appropriate yeast strain.
Using honey for priming because it would have been cheaper in 16th century London.
