Mash was all over the place - temp probe died. 75-60 deg :-O
Cold day. 12 deg
whirlpool added at flame out. quickly cooled to 75 deg. 20minute rest before cooling to 20c.
tasted prior to transfer - firm bitterness catches on the back of the throat, expect this will soften with fermentation. otherwise promising.
