Notes
Brewed 5/30/21. Mash in w/12.5 L Boulder H20, 3 g CaCl2. pH 5.7. Hold at 112 F for 15 minutes. Add acid malt, 0.5 ml lactic acid, pH 5.3. Heat to 146 F, pull decoction. Return decoction at 15 minutes prior to end of one hour hold, temp 151 F. Raise to 166 F for mashout. Sparge with water, added 3 ml lactic acid (pH 5.6, a little too much - 2.5 ml would have been just about right). pH of wort 5.27. Racked to ket 06/16/21.
Brewed again on 07/22/21, same recipe, but used 1/2 oz Saphir and 1/2 oz German Perle (7.2 alpha). Ferment at 62 F. Gravity 1.049
