Notes

4 lbs Fresh Cranberries -- bought fresh, then frozen, then cooked and reduced approx. 3/4 to 1/2 original Vol. Will add 1/3 of the "concentrate" to mash, will rack the finished fermentation onto other 2/3 in the keg for secondary.

1 large ginger root skinned and shredded into secondary

2/3 whole cloves added to secondary

Once happy with secondary taste after 3-7 days, will add .5 oz Graham Cracker concentrate to taste. Will increase to ~1 oz if needed.
