Used 5 gallons for mash in. Got 3.15 gallons in kettle with 1.075 gravity reading. Used 5 more gallons for mash out at 175 degrees to get kettle level to 7.65 gallons with pre boil gravity at 1.053. Realize I should have used the 4 gallons the recipe called to sparge as I missed OG by just a bit. |

Boil complete, dropped my new Hydra chiller at 15 minutes prior, whirlpooled with 4 ozs of Mosaic. Hydra was amazing, chilling the wort so quickly I shut it down to get whirlpool time in. |

Pitched yeast at 72 degrees, turned freezer down to 62 to try to help control fermentation temp. Temp stayed at 72 Saturday night but dropped to 70 Sunday and 69 Monday with active fermentation still on going. Adjusted freezer back to 67. |

First gravity reading as I dry hopped with 3 ounces of Mosaic. Doubt it will move much more, may take another reading Tuesday night. I may put it in keg after cold crash Tuesday/Wednesday. This may not be final gravity.
Wednesday night, removing first dry hops and adding 2 ounces of Mosaic for DDH. Started cold crash at 245am Monday morning, freezer set to 37 degrees. Due into judges Friday, force carb in my future. |
