Notes: IRECTIONS
Mill the grains and mash at 152–153°F (67°C) for 30 minutes, or until conversion is complete.
Add first-wort hops once the kettle is about 40 percent full. Sparge and top up as needed to get about 6 gallons (23 liters) of wort, depending on your evaporation rate. Boil for 60 minutes (adding kettle finings and nutrient, if desired). After the boil, do a whirlpool step: Stir or recirculate to create a vortex, meanwhile cooling the wort to 185°F (85°C); add the whirlpool hops and allow 15 minutes to steep and settle. Then chill to 63°F (17°C), aerate the wort, and pitch the yeast. Ferment at 65°F (18°C) until gravity has dropped to 1.021 (5.3°P), then raise to 70°F (21°C) until terminal. Once fermentation is complete, drop yeast (or rack to secondary) and add dry hops for at least 3 days. Once the beer has cleared VDK, crash to 32°F (0°C), add keg finings if desired, and condition at least 3 more days. Package and carbonate to 2.75 volumes or CO2.
BREWER’S NOTES
We treat the water with equal parts calcium chloride and calcium sulfate at a rate of about 0.7 grams/gallon (12 oz/15 barrels). We also adjust with a bit of phosphoric acid to brighten up the beer. For the yeast, you can use any Chico/California ale strain; we use Berkeley’s. |
