Notes

Brewed 1/25/20. 10' rest at 130 F, rest mash at 145, single decoction, return decoction and rest at 153 for 15', mash out at 165. Pitched slurry from 2.5 L starter into wort cooled to 50 F. Fermented at 46 - 50 F. At 12 days, racked to keg and performed diacetyl rest for 2 days at 65 F; gravity 1.013. Keg then placed at 32 F for lagering.

Tasting notes: Excellent Czech pils. The Omega labs really delivered the yeasty, malty Czech profile. A slightly lower finishing gravity would be nice, but that is nit picking (or could drop the OG, 1.053 is high for a pils anyway, or cut back on the munich/carahell a bit). Color was perfect deep gold. Maybe a little more Perle for bittering.
