Turned out fabulous.  Took about 45 days for it to finally start tasting good. There was a bit of a rubbery / plastic / soapy taste when it was green. This is normal for Kolsch yeast, and I'm glad it went away. I found some people online saying that flavor doesn't go away.   I did leave it on the yeast cake for 21 days, next time I'll package it sooner, or rack it.
