Ha i tang på toppen av mesken under meskingen. 200-250 gram er fint.

Etter mesking, la mesken fremdeles stå i kjelen, kjøl ned til tempraturen er på 35-40 grader. Tilsett så en halvliter med biola og sirkuler mesken så det får blandet seg. La Speidelen stå på 38 grader over ca 24-30 timer til PH verdien på 3.5. Fjern mesken og kok brygget i 90 min.

Gjæres på 20 grader, ikke under 20 og ikke over 24.

Tilsett mango i terninger i humlepose (meskepose). Jeg foreslår 50 gram eller mer pr liter. Mangoen tilsettes de siste 5 dagene av gjæringen. Mangoen får du kjøpt frossen.
