Notes
- This batch was not a full 5 gallons. I didn't fill the kettle all the way, output was about 4 gal.
- I used one pack of yeast and pitched it too warm, but it fermented fine. I wanted a yeast that had a higher fermentation temp but WLP001 is the best I could get at the home brew mart.
- FG 1015
- I have a tub o'water that I put ice bottles in to try to keep the temp in the range for the yeast. I have one of those thermo stickers on my fermenter to track it. I had the AC going to help moderate the temp.
- I keep a towel around the fermenter to keep light out.

Personal Comments:
My first experiment with a single hopped beer. Came out clean and clear, medium to light body, well balanced despite being really high IBU. More aroma would have been great. Should have given more time to carbonate before event. Was not as well-balanced leading up to the event, but mellowed a little just in time. It's a good thing this crowd generally likes high ABV, moderate to high IBU beers.
