Bring the wort to a boil and then turn the heat off (no need to boil for more than a couple of minutes).
Transfer to a CO2 purged keg and let the wort chill down to 95°f and then add the Goodbelly.
Once at the right level of sourness, transfer back to kettle and bring to a boil for 15 minutes, then chill and rack to a carboy and pitch yeast.
