Brew day. Shooting for 5.5gal into the fermenter, only got 5. OG=1.076

Pitched rehydrated US-05 at 6:45pm into 18°C wort.

12-10-17
Transferred to keg and set to 30psi. FG = 1.011. Expected 1.016. I adjusted attenuation of yeast to match final results in this recipe.

Lowered gas to 10psi.

Still have a little of this left in the keg. Was just a touch sweet for my taste, but still delicious. Very smooth. No hint of the 8.5% ABV, great head and body. Make again with .75lb of melanoidin.
