45min simmer / 15min boil

1200ml oxygenated 8hr high krausen starter

65F 4 days then free rise to 72F

Sub any 3 american hops in the whirlpool
Simcoe/Vic Secret/Mosaic

Whirlpool:
Chill to 180º then cut chilling water, add hops and recirculate for 30 min. Temp will stabilize at about 170°
Wirlfloc/Nutrients at end of whirlpool (Above 160°)
Then continue chilling to pitch temp

After TG chill to 30F and gell fine 3 days
Closed transfer to sani-purged keg
14psi at 38F 7 days
